Lactoferrin is a glycoprotein that binds to iron and is found in the milk of mammals, including mother's milk.
Lactoferrin was first discovered in milk by a Danish chemist in 1939, and received its name from a French scientist in 1961. The name reflects the fact that this component found in milk can bind to iron. As it has a reddish color, it was also called "red protein" when it was first discovered.
This protein is considered to increase the body's defense system ability to fight external enemies, which is crucial for maintaining our health.
Lactoferrin is a rare ingredient that is difficult to obtain from our diet, and even 100 grams of natural cheese, a food with a relatively high amount of lactoferrin, contains a measly 0.3 grams. What's more: as it is very sensitive to heat, cheeses that undergo a heating treatment, such as Gouda or processed cheese, contain even less than that. As a matter of fact, you would need to drink more than one liter of fresh, unpasteurized milk to obtain 300 milligrams of lactoferrin, which is not a practical solution.
